Vegetable Chowder
This soup is like a taste of summer in winter!
2 c. frozen corn kernels
2 c. chopped celery
1/2 green pepper, diced
1 onion, sliced thinly
1 can tomatoes (canned tomatoes have more absorbable lycopene than fresh)
2 c. chicken stock
2 T olive oil
2 T flour
1 c. milk
Paprika, salt, and pepper to taste
Cook all the vegetables and the stock together for 30 minutes. Cook the oil and flour together in a saucepan, stirring constantly, till slightly brown. Stir in milk and heat till bubbles begin to form at the edge of the pan. Stir the milk into the soup. Season to taste.
Khaeng Jut Pak
A delectable Southeast Asian soup — add chunks of chicken for more protein
6 c. chicken broth
1 T fish sauce or soy sauce
1″ piece of fresh ginger root (chop or press in a garlic press)
3 cloves garlic (chop or press in a garlic press)
1 small onion, chopped
1 small head of cabbage, chopped
2 carrots, sliced diagonally
1 red pepper, or 1/2 t. red pepper flakes
Cook all the ingredients together until the vegetables are tender.
French Onion Soup
This soup is usually smothered with bread and cheese when served in a restaurant, but it’s delicious served simply. Onions contain Vitamin C.
4 c. thinly sliced onion
2 T olive oil
6 cups beef stock
pepper to taste
1 small baguette, sliced
Parmesan cheese
Saute the onions till they are soft and beginning to brown. Add the stock and the pepper. Simmer for one hour. Lay a slice of bread in each bowl when serving. Ladle soup into the bowl and add a sprinkle of Parmesan cheese.
